Job Summary Assist the Chef in the managing of the kitchens’ daily operations, and production, including menu development, inventory and purchasing of supplies, and cost control, and catering events.
Maintain the highest level of professionalism for food quality and sanitation standards while supervising the activities of the kitchen staff and monitoring food production and presentation in the absence of the Senior Executive Chef.

These duties and responsibilities will be rated on the Annual Performance Review.
Supervise, manage and prepare daily production list that relates to all culinary activities, including catering.
Train, manage and or supervise kitchen personnel, supervise the operation of all stations are stocked before and during the meal period.
Select and develop recipes; standardize production recipes to ensure consistent quality; establish presentation technique and quality standards; plan and price menus.
Manage the placement of food/supply orders, as required, estimate food consumption, and supplies as required, and ensure staff are following all standard recipes and portions correctly.
Manage the equipment operation/maintenance; and ensure proper safety and sanitation in kitchen, ensuring that the kitchen, dish, and storage areas clean and organized.
Additional Responsibilities Assist in hiring and training employees according to company standards.
Set excellent customer service and work examples.
Manage staffing levels throughout shift.
Oversee kitchen labor and food cost to budgetary requirements.
Perform other responsibilities as assigned.
Qualifications: Education, Experience, and Certification(s) Must be able to pass and maintain a Tier 5 FBI Security Clearance required.
College or culinary training or extensive cooking and production experience required.
5 to 7 years' progressive professional cooking experience required.
A minimum of 3 years working in management required.
Culinary experience in a hotel or banquet hall preferred.
SafeServe certification required.
Knowledge, Skills, and Abilities Strong interest in training and coaching.
Ability to fill-in for any kitchen position.
Commitment to quality service, and food and beverage knowledge.
Understanding of proper use and maintenance of major kitchen equipment, including stoves and refrigeration.
